Bringing fresh thinking back from his world travels, this is executive chef Neil Haydock’s favourite kind of food: hands-on, punchy flavours, small plates. Start with garlic chicken wings and chipotle mayo. Wrap your slow-cooked adobo brisket, Yucatan chicken or peri peri prawns in proper corn tortillas, then dress with salsas and sauces that sing. Keep the South American mood with arroz con leche, grated chocolate and orange zest for dessert. Book ahead to add a wine flight, matched for every course.
